A cheery and inexpensive start to a holiday gathering — or just an evening at home or while cooking dinner — could involve the Corvezzo Extra Dry Prosecco, a gentle sparkling wine, from Italy’s Veneto region, that’s organic and vegan-friendly. This is a blend of 85 percent glera grapes and 15 percent “DOC admitted grapes,” meaning grape varieties allowed by the ruling body of wine matters in the country. Those admitted grapes, in case you’re curious, include verdiso, bianchetta trevigiana, perera, chardonnay, pinot bianco, pinot grigio and pinot noir, the latter vinified white. The Corvezzo Extra Dry Prosecco displays a very pale, almost colorless but silvery robe animated by a fount of medium-sized bubbles; aromas of green apple and pear, almond blossom and acacia flower are encompassed in a steely, limestone effect; these elements segue seamlessly to the palate, where the wine delivers what I think of as Prosecco’s defining virtue — a texture that’s taut and crisp while simultaneously feeling soft and cloud-like; there’s nothing else like it in the world of sparkling wine.
